Fusilli Lunghi is long fusilli: a spiral that eats like a long pasta and still traps pesto in the twist. It is not the short corkscrew most Americans picture when they hear fusilli.
Pasta Sonoma extrudes it from premium durum and semolina (Montana hard amber durum wheat) and dries it in small batches in Sonoma County. The shape is a conversation piece and a practical one: oil-based sauces cling, and it holds up in a composed salad.
We pack two bags of it in the Short Pastas combo and call it out in the street-corn salad recipe as an alternate to torchiette.
